Who we are

A bakery, not a
bakery chain.

Hey Brother Baker has been baking in Long Beach since 2016. The shop sits on East Anaheim Street, across the road from a muffler shop, with a plywood counter, a wall of racks, and whatever came out of the oven that morning stacked in front of you.

Everything is laid out so you can see it. Loaves along the counter with their names chalked on little black cards, pastry in the case, coffee behind. If you want to know what is in something, ask. Somebody made it a few hours ago.

There are vegan options too, which regulars call out by name in their reviews.

How it gets made

Weighed, shaped,
baked, sold.

Dough gets cut and weighed by hand, one piece at a time, on a bench dusted with flour. The jalapeño cheddar goes through the same routine as everything else, just with more in it.

Because it is all baked here that morning, the range is finite and it does run out. Reviewers describe pastry still warm from the oven, which is a nice way of saying they got there early.

Ham, pickles and cheese pressed flat and hot. It works because the bread underneath it was made in the same room a few hours earlier, which is the entire argument for buying lunch at a bakery.

I rarely give out 5 stars all across but this bakery just hits the spot in every single angle in the simplest ways. The bagels are the closest to NYC boil and bake you'll find. They are so incredible it's my treat to a 10 mile weekly bike ride. The banana bread with chocolate and pineapple chunks is a unique twist that reminds of me of the best I've had in Costa Rica.

I stop by Hey Brother Baker almost every Saturday at the Cerritos Farmers Market, and it's easily one of my favorite vendors there. They offer some of the best breads and pastries, and everything always feels thoughtfully made and fresh. The team is welcoming and genuinely friendly, and you can tell they care about their customers. I also appreciate that they have options for vegans.

This bakery is right across from a muffler shop where we had some work done. The two pastries I had were excellent, one savory (spinach mushroom) and one sweet (apple goat cheese). Both were still warm from the oven that morning. Very friendly people there!

Somewhere to sit
